I love CrossFit and had worked for about 3 years post-kids at finding a formula for Paleo-based eating and workouts that became really effective for me and my family. But I abruptly stopped eating meat and poultry in May 2018 after reading a book called A Plea for The Animals and found myself on a pretty rapid journey to becoming vegan. I didn’t know a single person who was vegan or how to reset my diet, so after about 6 months of trying to figure it out, I felt really off track and realized I needed help. I was so relieved in my first meeting with Katie because she had no judgement, was an athlete, and was focused on taking my existing nutrition and fitness knowledge and building a new strategy together. Meeting her was a big turning point for me and I LOVE Katie! Her work to help me identify protein sources and plot out what a day of eating should look like was invaluable. We expanded that perfect day into weekly plans and then used those plans to meal prep. That was truly the formula I needed to go back to eating properly on a consistent basis, complete my workouts with lots of energy and come back to a more recognizable, leaner version of myself. I honestly didn’t know if it was possible, but now I realize with the right plan, a healthy plant-based diet is absolutely possible AND enjoyable!

I had been struggling with high blood pressure and high cholesterol for several years. I also recently found out I had high triglycerides and low potassium. I wasn’t sleeping well, was suffering from digestive problems, was feeling run down and -- discouraged. I was also trying to lose some weight and the ‘ubiquitous’ belly fat. I was getting nowhere.

 

Then I met with Katie! She has a very holistic approach. She took the time to examine all aspects of my life – exercise, sleep, diet, down time, etc. She quickly pointed out the positives and negatives -- to achieving my goals. She gave many helpful suggestions and tailored a plan just for me. I made my choice (with her support) to make some serious changes in my life/diet. I met with Katie intermittently. She was great – always focusing on the positive, adjusting and readjusting my diet, exercise as needed.

 

It is amazing! In a matter of 5 months my blood pressure, cholesterol, triglycerides and weight – all decreased!! My potassium level increased to normal. I am sleeping well, my digestive problems have vanished and I have new energy!

Katie came highly recommended by my doctor. Instead of sick care, I really needed to work on well care. Katie was a good fit from the beginning. She was optimistic, but realistic, and took in to account where I was at (not very healthy). We've been meeting almost every month, setting goals, looking at what I've been eating, adjusting what hasn't been working. 

The biggest thing that has made working with Katie different than any other nutritionist is that she cares and looks at more than the nutrition aspect. We look at my exercising, how that will help me achieve my goals and how my nutrition contributes. She did a "kitchen consult," which was a turning point for me. She's available for questions--even those that seem silly. Her recipes are amazing, and have gotten me to try things I never would have in the past (though I'm still staying away from asparagus!).

I finally admitted a couple months ago that when I actually eat healthy, the rest of my life feels better and exercise is easier.

Katie doesn't preach any radical diets, just clean eating. Seems easy, but I need guidance and accountability--calm accountability. Because of her acceptance, I feel comfortable telling her the "slip-ups" and when I just need some coaching on what to eat and where to go with it.

Katie Diehl is a nutritionist and an athletic trainer extraordinaire. I met Katie when I was 56 years old and at least 20 pounds overweight. She has done an amazing job for me, and I’m not so easy. I’ve never been consistent with my workouts, and my eating habits can be pretty horrible – I’m a chocaholic, among other bad habits. In addition, I suffer from a chronic illness which can make workout consistency even more challenging. In the midst of all of this, Katie has been a godsend. She extensively researched my illness and developed a diet and exercise plan tailored to my individual needs. As a trainer, Katie has been fantastic – our workouts are hard but she makes them fun and entertaining, and she’s incredibly protective of me throughout. Katie is always sensitive to my health and well-being, and she’ll flexibly adapt our workouts to my sense of wellness on a given day. Throughout my journey, Katie has become a dear friend, and I consider myself so fortunate to have her in my life and helping me restore my health.
